From food truck to storefront

When Maya Daniels parked her food truck outside the Roosevelt Row art walk for the first time, she sold out in ninety minutes. Three years later, that same menu — and that same line — has a permanent address.

Starting small on purpose

Daniels kept the truck deliberately lean: a three-item menu, one fryer, and a point-of-sale tablet that doubled as her accounting department. “The truck was my market research,” she says. “Every weekend told me exactly what the neighborhood wanted.”

The leap

The move to brick-and-mortar came after a microenterprise loan through the City of Phoenix and a crowdfunding push that her regulars funded in eleven days. The storefront kept the truck’s soul — the counter is literally the truck’s old service window, remounted.

“Get your numbers right before you get your lease. And get listed everywhere people search — half my new customers say they found us through a directory, not social media.”
